Christmas Crostini are light and bright canapes, perhaps welcome at any festive time. Try adding avocado or replace the bread based with baked or toasted wrap, rice crackers or cucumber.

Ingredients

Prep: 10 mins Cook: 5-10  mins Serves: 4-6 

1/2 baguette*

3 tbsp olive oil

2-3 ripe tomatoes, peeled and de-seeded

12 green olives, stoned and chopped

1 tbsp balsamic vinegar

1 orange, zest finely grated

2 tbsp chopped basil

Salt and pepper, as necessary when tasted

To Garnish

chives, (optional)

basil (optional)

 

Method

CUT the baguette into thin slices.

BRUSH each slice lightly on both sides with olive oil.

GRILL lightly on both sides until golden brown; or bake @ 200 C/400 F/Gas 6 for 5 minutes.

CHOP the tomatoes finely and combine with the olives, remaining olive oil, vinegar, orange zest and basil.

SEASON with a little salt and pepper to your taste.

ARRANGE the prepared baguette on a platter and top with the tomato mixture.

GARNISH

Serve

As a canapé or snack.
